The number of tracks varies from song to song, but the general template layout is around 100. They were tracked in Cubase SX 3 through a variety of preamps and settings, some of which include a Tascam DM-24 hooked up via ADAT lightpipe to a Mackie Onyx 800r and a MOTO 2408 mkIII PCI to get it into the PC. No macs around here.

There are 3 guitars, with each take having 4 tracks… 3 mics, and the raw direct signal. Most have acoustic or clean passages, which are similarly tracked, usually not all 4 though, plus leads and thickening tracks.

Drums, kick snare, toms(stereo), overhead(stereo), cymbals(stereo), + room + ambient. Some were tracked live with roland V-Drums and others were programmed, but in both cases the MIDI was then routed through various drum modules.
